On the bottom of the MoTak MST-36-X prep table, a two-section refrigerated base holds product between 33 and 41 degrees Fahrenheit, while the top rail accommodates 10 sixth-size pans for convenient access. Users can adjust the electronic control system to manage temperature set points and defrost frequency, reducing the risk of product temperatures accidentally spiking or dropping. The cabinet interior is lined with two adjustable, heavy-duty, coated shelves that accommodate 10 sixth-size pans. Its interior walls, floor, and ceiling are made of durable stainless steel to endure scrapes and dents from consistently loading and unloading products.

To maintain product temperatures, the MoTak MST-36-X sandwich and salad prep table’s interior cabinet has two self-closing doors. When users need to load large amounts of product, they can secure the doors in a 90-degree position. The unit’s condensing coil is also accessible for cleaning and servicing, simplifying maintenance. Above the refrigerated section, a stainless steel countertop endures scratches and scrapes when users slice food items, and it provides a wide surface to prepare multiple ingredients simultaneously.
